Strong cheeses are best for a cheese log gift.
Cheese logs are the perfect treat to take to a birthday or Christmas party. There is little chance a cheese log will not be gratefully received, as long as the seasonings are fresh and the cheese is strong. Added bonuses of this recipe are that it is simple to make and simple to adapt for the individual tastes of its recipients.
Instructions
1. Grate cheddar cheese into a mixing bowl; add cream cheese and milk. Beat until both cheeses are well mixed.
2. Drain the pimientos and add them to the cheese mixture. Add the onion, Worcestershire sauce, a pinch of salt and a pinch of red pepper flakes. Add 1/2 cup walnuts and half the bacon to the bowl. Juice the lemon and add 4 tsp. of the juice to the mixture. Mix well.
3. Pour mixture onto plastic wrap and form into a log. Cover completely with the wrap and place in the refrigerator to chill two hours.
4. Chop the fresh parsley and place in a pie plate. Add the remainder of the bacon and walnuts to the parsley and mix thoroughly.
5. Remove the cheese log from refrigerator and roll in the walnuts, parsley and bacon. Cover log in fresh plastic wrap and keep in fridge overnight.
