1. Begin by gathering all needed ingredients and utensils. Wash the potatoes and make sure all dirt and eyes are removed from them. Place margarine and cooking oil in skillet and set on burner. Set burner on medium-high heat and allow margarine to melt. Chop onion into small bite size pieces.


2. Once margarine is melted, add onion to skillet. Cut potatoes into one half to 1 inch bite size pieces and place them in the skillet.


3. Open the sausage and cut into slices about ¼ inch thick. Then cut the slices into quarters. Add the sausage to the potatoes. Salt and pepper to taste. Cook mixture until potatoes are brown and fork tender.


4. Crack both eggs into a small bowl and beat lightly. Pour egg over potato mixture and stir until egg is cooked. Remove from heat and serve.
