Make Warm Fingerling Potato And Swiss Chard Salad







Warm fingerling potato and Swiss chard salad is a very simple, easy to prepare and assemble salad that can accompany many different meals as a side dish or first course. Combining the earthy, creamy taste of fingerling potatoes and the bitter, savory taste of Swiss chard, this salad is complex and rich in both flavor and presentation. Small heirloom potatoes can be used in this salad as well if they are in season and available in your area.


Instructions


1. Put the potatoes in a large saucepan with enough salted water to cover the potatoes. Bring to the boil and reduce the heat to low. Cook for five to six minutes or until the potatoes are tender. Drain the potatoes in a colander and set aside until needed.








2. Heat the olive oil in a large sauté pan over medium heat. Add the garlic and cook for one minute or until nearly browned.


3. Add the Swiss chard and potatoes to the sauté pan with the garlic. Cover the pan and cook for four to five minutes, stirring regularly. Add the vinegar and season with sea salt and coarse ground black pepper to taste.


4. Transfer the mixture to a large serving platter and serve immediately while hot.
