Make Chicken With Mushroom Sauce Over Rice







Chicken with mushroom sauce over rice makes a nutricious and delicious dinner.


A warm, home-cooked dinner can bring a feeling of comfort and satisfaction. Chicken with mushroom sauce over rice, while simple, is healthy and loaded with protein thanks to the chicken, fiber due to the rice, and niacin, potassium, riboflavin and selenium because of the mushrooms added to this dish. The rice can also be substituted with whole-wheat pasta.


Instructions








1. Place the skinless, boneless chicken breasts between two sheets of wax paper. Pound the chicken breasts with a mallet or the palm of your hand to flatten them. Wrap the chicken breasts in plastic wrap and allow them to set in the refrigerator until they reach a firm consistency. You may choose to do this before you leave for work in the morning so the chicken breasts will be ready by dinner time.


2. Heat 1 tbsp. of olive oil in a small pan over medium heat. While this is heating, prepare the mushrooms and shallots. Thinly slice each of them and place the shallots in the pan. Allow them to cook for three minutes while stirring occasionally. Add in the mushrooms to the mixture and saute together for two additional minutes. Reduce the heat to low. While this is being prepared, add water to a pot and bring it to a boil. Add in the desired amount of rice when the water comes to a boil. Allow the rice to cook and fluff it with a fork when finished.


3. Combine the flour and white wine in a small bowl. Use a whisk to combine the ingredients until there are no lumps and a smooth texture is reached. Add this to the mushrooms and shallots. Turn the heat to medium. Add the chicken stock while slowly stirring the mixture. Keep stirring occasionally for approximately five minutes. The sauce should thicken. Remove the pan from the heat and sprinkle in the rosemary.


4. Over medium heat, heat 1 tbsp. of olive oil in a large-sized non-stick skillet or large pan. Allow the chicken to cook in the skillet until there is no pink color on the inside and the chicken has been fully cooked. This should take around five minutes. Spoon out a bit of rice on each plate. Place two halves of chicken breast on top of the rice and drizzle mushroom sauce over the chicken. Sprinkle a bit of parsley on top and serve.
