Make Egg White Tuna Salad







Tuna Egg Salad is a great quick-fix meal that will keep your energy levels high throughout a busy workday or prior to an afternoon of working out. Tuna fish is a nutrient-dense food that provides high quality protein and is rich in a variety of important minerals including selenium, magnesium, potassium; the B vitamins niacin, B1, and B6; and perhaps most important, the beneficial omega-3 fatty acids (which our bodies cannot produce on their own). Here is my recipe for a delicious tuna egg salad prepared with heart-healthy egg whites.


Instructions


1. Place the eggs in a pot, cover with water and bring to a boil. Eggs are one of the most nutritious, inexpensive foods there are. They are filled with vitamins and minerals, in particular Vitamin B, which is responsible for so many functions in our bodies. Eggs are also highly beneficial because they're so low in calories with only 78 kcals per medium egg.








2. Once at a boil, turn off heat and leave the eggs until cooled.


3. Discard the egg yellows, chop the whites and combine with the 2 tbsp. of tuna.


4. Mix in 1 tbsp. nayonnaise (soy mayonnaise) or low-fat mayo and add black pepper, salt, 1 tsp. Dijon and curry powder (optional).
