Make A Sweet Potato Salad







When going out to a picnic or a potluck, everyone expects someone to bring a potato salad. So, why not be the one to do it this time, but give them a surprise. Instead of a regular potato salad, why not try a nice and refreshing sweet potato salad? It will charm their taste buds and give everyone an unexpected twist.


Instructions


Sweet Potato Salad


1. Preheat oven to 350 degrees. Chop walnuts and place on baking sheet. Bake in oven for about ten (10) minutes. Take walnuts out and allow to cool.








2. Take sweet potatoes and grate on cheese grater. Place sweet potato shreds in large bowl. Add carrots to bowl. Core and chop apple, leaving skin on, into small bite-sized pieces, and add to bowl. Place walnuts and grapes on top. Mix ingredients together.


3. Pour apple cider into small bowl and add vinegar, oil, lemon juice, sugar, pepper and garlic to cider.


4. Mix until all ingredients are incorporated. Pour dressing over sweet potato mixture. Mix until all ingredients are covered with dressing.


5. Place two romaine lettuce leaves on plate. Spoon sweet potato salad over leaves. Top with crumbled blue cheese and red onion. Serve cold.
