Candy Whole Dried Apricots







Candied apricots make sweet snacks.


Candied apricots are decadent enough to be enjoyed on their own, or you can add them to a variety of desserts. Enhance homemade holiday cakes, breads or biscotti with the sweet fruit as a special treat. Start with whole, dried apricots and cover them with a sugar glaze. The glaze will dry to a shiny finish, making the dried fruits as decorative as they are delicious. For the best taste, candy only high-quality dried apricots. Add this to my Recipe Box.


Instructions


1. Pour 4 1/2 cups of white granulated sugar and 1 cup of water into a medium saucepan. Turn the heat to medium-low and stir the mixture until the sugar dissolves.


2. Stir 1/3 cup of light corn syrup into the sugar water. Turn the heat to high and bring the mixture to a boil. Boil the syrup until it reaches 340 degrees when checked with a candy thermometer. Remove the syrup from the heat.


3. Cover a baking sheet with wax paper.


4. Dip 36 whole dried apricots into the syrup, one at a time, using a fork or a wooden skewer. Completely cover the apricots in the syrup.


5. Refrigerate the sheet of candied apricots uncovered in a refrigerator overnight to allow the glaze to set.
