Use a Pressure Canner With a Ceramic Range Top


Using a pressure canner on a ceramic-top stove is often not recommended due to the risk of burner or stove damage. Before deciding whether or not to use a pressure canner, you should consult with your stove manufacturer or ask for alternate canning recommendations. If you are able to use a canner on your ceramic stovetop, there are steps you can take to facilitate successful canning.


Instructions


1. Ensure that your canner is no more than two inches larger than the diameter of the largest heat element on the stovetop. Do not use a canner larger in diameter or enough heat may not be obtained to correctly pressurize the canner.








2. If possible, use a pressure canner with a flat bottom to ensure better heating ability. If your canner has a concave bottom, measure to see if the dip is greater than 1/8-inch. Do not use the canner if the concave is beyond this measurement, as proper heating may not occur.


3. Place the canner in the center of the largest heating element on your stove. Fill with two to three inches of water or the recommended amount for the food you are preserving. Place the canning rack inside the canner and set filled jars on top of the rack, then place the lid tightly on the canner.


4. Allow the canner to heat until the pressure begins to build inside, as indicated by your weighted gauge or pressure dial. Monitor the heat carefully, as ceramic top stoves may heat more slowly than a coil burner. Once the desired amount of pressurization inside the canner has been achieved, watch the canner for correct heat maintenance.


5. Complete the canning process as recommended by the canner manufacturer and for the type of food you are preserving. Allow the ceramic top heating element to cool completely before removing the canner from the burner. Do not drag the canner across the ceramic surface. This may scratch or crack the surface.
