Make Delicious Ricotta Cheese







Ricotta cheese can be used in a number of dishes, from tortes to lasagnas, and it is simple to make at home.


Ricotta is a fantastic cheese to make at home, especially if you are a cheese-making novice. It doesn't require any specialty ingredients or molds, and the taste and texture of fresh, homemade ricotta cheese is far superior to what you'll find on grocery store shelves. All it takes is four basic food ingredients, a few tools and a few minutes to create your own creamy, flavorful ricotta.


Instructions


1. Combine milk, cream and salt in heavy saucepan.


2. Place over medium to medium-high heat and bring to a boil, stirring occasionally to prevent burning.


3. Once the milk-cream mixture is boiling, add lemon juice or vinegar.








4. Reduce heat to low and stir constantly until curds separate from liquid, approximately one to two minutes.


5. Once the mixture is curdled, remove saucepan from heat.


6. Line strainer or colander with a double layer of cheesecloth and place in sink.


7. Pour mixture from pot into strainer, letting liquid drain into sink.


8. Once liquid is drained, place strainer or colander over bowl. Set aside and let drain for one hour.


9. Once mixture has drained and only solids remain, discard liquid. Cover remaining solids with cheesecloth and refrigerate in a covered container.
