Make Country Style Smothered Chicken

1. Cook bacon slices on medium heat until crisp in a deep skillet. Remove and drain bacon on paper towels, reserving drippings in pan. Crumble bacon and set aside.

2. Place chicken in a bowl and cover the chicken pieces in flour. Place in skillet, cook on medium heat until brown on all sides. Remove chicken, set aside.

3. Reduce skillet heat to low and stir in garlic, onions, celery and carrots for about five minutes or until tender. Stir in unused flour until well blended. Pour in chicken broth, season with cayenne and black peppers, bringing to a boil.

4. Return chicken to skillet, cover and cook over low heat for about an hour, stirring occasionally so chicken doesn't stick to pan.

5. Serve over cooked rice or noodles; sprinkle with crumbled bacon.
