Make Carrot Oatmeal Cookies







Most people enjoy cookies as an occasional treat, and cookies made with carrots and oatmeal give you essential vitamins and fiber in every bite. Carrot oatmeal cookies are easy to make and provide a change of pace from the everyday chocolate chip variety.


Instructions


1. Preheat the oven to 375 degrees Fahrenheit.


2. Spray the cookie sheets with nonstick cooking spray and set aside.


3. Put 2 sticks of butter or margarine into a mixing bowl. Add 3/4 cup of brown sugar and 3/4 cup of white sugar to the bowl. Pack the brown sugar into the measuring cup as tightly as you can to get an accurate measure. Beat the ingredients with an electric mixer until they are well combined and creamy.








4. Add 2 eggs and continue beating until fully incorporated. Mix in 1 teaspoon of vanilla extract.


5. Shred the carrots with a box grater until you have 1 cup. Stir in the carrots with a wooden spoon.


6. In a separate bowl, combine 1 cup of oats, 1-3/4 cups of flour and 1 teaspoon of baking soda. Add to the sugar-butter mixture and combine with a wooden spoon.


7. Pour in 1/2 cup of chopped walnuts, raisins or a mixture. Stir until they are evenly distributed.


8. Drop the dough by teaspoonfuls onto the cookie sheet at evenly spaced intervals. Four rows of three cookies usually works well. If the dough is too soft to handle, refrigerate it for an hour before spooning it out.


9. Bake the cookies for 10 minutes or until browned on top. Allow them to cool before eating.
