Make Tamale Dough







Making tamale dough, also called masa, allows you to make your own tamales to your own taste. Three pounds of fresh corn mixture with one pound of lard will give you enough dough to make about 45 to 50 tamales. Making your own tamale dough can help you to make tamales much cheaper than buying them at the store and gives you the satisfaction of making them yourself.


Instructions








1. Mix the lard with an electric mixer in a large bowl for about 4 or 5 minutes until the lard has a fluffy texture. Add a handful of corn mixture to the lard and mix it thoroughly into the dough with the mixer.


2. Add the chicken stock to the dough and mix the batter completely. Continue adding the 3 pounds of corn mixture to the dough one cup at a time, mixing the batter thoroughly with each added cup.


3. Mix in the salt, onion powder and garlic powder into the dough until it is completely mixed with a creamy texture. Add cooled red chile until it is thoroughly mixed.
