Pancakes make a satisfying traditional breakfast, but not everyone appreciates the traditional ingredients used to make them. Vegans, who don't eat any animal products, object to milk and eggs and people watching their cholesterol tend to stay away from eggs as well. It's easy enough to substitute another liquid for milk, but eggs pose a tougher challenge. They're liquid, but bond together when cooked, giving structure to the pancake. Though it may seem strange, ground flax seed can serve the same purpose and works as an egg substitute.
Instructions
1. Stir the flax meal and water together in the small
2. Spray a frying pan or griddle lightly with oil and heat on medium-high heat.
3. Add the flour, baking powder, salt and sugar into the large mixing bowl. Stir to combine. Create a well in the center of the dry ingredients.
4. Pour the milk, flax seed mixture and melted butter into the center of the dry ingredients. Stir to combine.
5. Scoop a quarter cup of batter onto the hot pan. Cook until browned, then flip and brown the other side. Repeat with the remaining batter and serve the pancakes hot.
