Make Cucumber Dill Sandwiches

Cucumber sandwiches are an easy, fresh snack.

Cucumber sandwiches are light, refreshing, and great for your garden party, baby shower, tea party, book club, or any gathering with ladies where you are serving light snacks. Make the cucumber sanwiches low calorie and low fat by using reduced fat or fat free cream cheese.

Instructions

1. Empty the container of whipped reduced fat or fat free cream cheese into a bowl. Add the package of dry Italian salad dressing. Mix the reduced fat whipped cream cheese with the dry Italian salad dressing, making sure they are combined completely and no dry seasoning is left on top.

2. Wash the cucumber and cut into thin slices. Wash and chop a bunch of fresh dill. For a pretty twist, use a potato peeler to create lines in the cucumber peel before slicing. Do this by peeling small alternating lines into the cucumber.

3. Spread each slice of rye cocktail bread with approximately one tablespoon of the cream cheese mixture. Top each piece of bread with one cucumber slice, sprinkle with coarse grated sea salt and black pepper, and top each sandwich with a few sprigs of fresh chopped dill.
