Make Tortellini Soup







Tortellini soup is a hearty alternative to other soups containing pasta, such as chicken noodle or ramen noodle soup. It fills your bowl with so many delicious ingredients, you will think you need a spoon and a fork to eat it. Here's the recipe.


Instructions


1. Cook the bacon over high heat in a Dutch oven or large saucepan until crisp. If you are using precooked, prepackaged bacon, just put it into the Dutch oven and go to Step 2 (no need to cook over high heat).


2. Add the chopped onion to the bacon and cook until the onion is soft. If you do not have a fresh onion, frozen chopped onion works great (use about ? cup to ? cup).








3. Stir in the minced garlic and cook for about 1 minute (until the garlic is translucent). Jarred, minced garlic is a nice alternative to fresh garlic (1 teaspoon will equal 2 cloves of garlic). The aroma should be getting nice by now.


4. Add the chicken broth and bring to a boil.


5. Stir in the tortellini and cook for 10 minutes.


6. Add the thawed spinach and cook for 3 more minutes.


7. Serve the tortellini soup piping hot in soup bowls. If desired, sprinkle fresh or grated Parmesan cheese on top.
