Wrap & Freeze Sharp Cheese

Sharp refers the complexity of the taste of cheddar cheese.

Semi-hard and hard cheeses, such as cheddar, freeze well. Sharp refers to the taste of the cheese rather than a specific type of cheese. Sharp cheese has been aged for a longer period of time than mild cheese. While cheese lasts about three weeks in the refrigerator, freezing cheese lets you keep it longer while retaining the flavor. After a long freeze, the frozen cheese may have an altered texture, but you can add it to sauces and soups without noticing this. Wrapping and freezing sharp cheeses makes sense, as it saves you from wasting the flavorful cheese.

Instructions

1. Cut the cheddar into small pieces of about ½ lb. each. This keeps you from having to thaw and rethaw the cheddar.

2. Wrap the cheddar in parchment paper and then freezer-safe plastic wrap. If you don't have or can't find freezer-safe plastic wrap, you can skip it and opt for a freezer-safe plastic bag instead.

3. Mark the wrapper with the current date and the use-by date of the cheese; it's usually on the original wrapper. Place in the freezer, where it will last indefinitely. For the best quality, use farm-bought cheese within six weeks and processed cheese within six months.
