Make An Orange Lemon/Lime Coconut Cooler







This tropical drink can be made in minutes, and it is a refreshing delight on any warm summer day. The mix of orange, coconut and lime is an interesting combination that will have you going back to your blender to refill your glass.


Instructions


Orange, Lemon/Lime, Coconut Cooler








1. Place one cup of ice in a blender. Open a can of mandarin oranges and dump them into the blender. Measure out two tablespoons each of lemon and lime juices to add into the blender as well.


2. With your grater, lightly grate the outside of a lime, making sure not to take off the white pithe. Put one teaspoon of lime zest into the blender. Add 1/4 cup of coconut milk. Pulse blender several times to mix ingredients.


3. Add a tablespoon of corn syrup, and one teaspoon each of coconut extract, orange extract and ginger into the blender. Blend until the mixture is smooth.


4. Place straw into a glass. Pour the cocktail into the glass, and garnish with whipped cream and a sprig of mint.
