Make Soy Cucumber Salad







Cucumbers marinated in soy and vinegar provide a different flavor.


Cucumbers marinated with vinegar make a tangy salad reminiscent of southeast Asia. This salad pairs well with barbecued meats, roasts and baked fish. The use of a vinegar-based sauce, as opposed to a tomato-based sauce, gives the salad an almost pickled flavor. This salad is relatively quick to put together and requires only a few ingredients for a fresh, interesting side dish at your next barbecue.


Instructions








1. Wash and peel the cucumbers, peeling every other row to create stripes on the cucumber. Slice the cucumber into medium-thin slices. If the cucumbers are too thin, they get soggy. Chop the onion.


2. Place the cucumber in a bowl and add the chopped onion. Pour in low-sodium soy sauce until the cucumbers are covered and the bowl is at least three-quarters full of soy sauce.


3. Pour in the vinegar until it is just below the level of the cucumbers. Mix well. Add salt and pepper to taste.


4. Place the bowl in the refrigerator to marinate for an hour or two. When serving, mix the salad, then scoop out the cucumbers.
