Make Jamaican Chicken Soup

We all have our own ways of making chicken soup. This is my way of making it, hope it proves useful to you.


Instructions


1. Making chicken soup is a fairly easy thing. I learned to cook from an early age, and this is one of my favourite things to cook. Jamaican chicken soup is richer, thicker and can be eaten alone as a meal rather than an appetizer.


2. The first step in making Jamaican chicken soup, is to get the ingredients. You will need about 2 lbs of chicken, cut into bite size pieces. Next, you will need some pumpkin peeled, carrot and chocho all cut up. Add about 4-6 cups of water to a pot and bring to boil. After it begins to boil, add the chicken, cho cho, carrot and pumpkin.


3. Let those ingredients cook for 30 minutes; while they are cooking peel the Irish and the yam. After the 30 minutes have passed, you can add the yam and Irish to the pot. Let cook for 15 minutes and then add your flour dumplings if you are making any. If not, add the escallion, thyme, one teaspoon of butter and the pimento seeds. Then finally add the cock soup to the pot. let simmer for 15 more minutes on low flame and let cool and drink.


4. All these ingredients can be found in a Caribbean market or even at a farmers market.
