Mock Lobster Casserole


If you love lobster but find it's a bit too expensive, try this Mock Lobster Casserole. It's fancy enough for a party dish or for company, but easy and cheap enough to become a regular meal at you house. The imitation crabmeat gives this casserole a wonderful texture and flavor and goes very well with the other ingredients. Follow the steps below and you'll be serving this in just under one hour.

Making The Casserole


1. Preheat the oven to 350 degrees. Put the broccoli in a bowl with the water and cook it in the microwave for about 5 minutes till tender and then drain.


2. Take a baking dish and spray the bottom with non stick cooking spray. Place the broccoli in the baking dish and then sprinkle the cheddar over it.


3. Melt 4 tablespoons of the butter or margarine over medium high heat. Add the onion and cook for about 3 minutes. Stir in curry powder, flour, and the salt. Pour in the milk and cook stirring for 3 minutes.


4. Add the lemon juice and the crabmeat to the pan and continue to stir. Pour the sauce over the broccoli. In a separate bowl, toss the remaining butter and the bread crumbs. Sprinkle that over the sauce and bake in oven for about 30 minutes till slightly brown and hot. Serves 4.
