Marinate Carrots In Tomato Soup







For a tasty way to marinate carrots, you can concoct a vinegar-based and tomato dressing that infuses the vegetable with flavor. The recipe for marinated carrots varies according to personal tastes. Marinated carrots also can contain fresh herbs, crushed garlic and a variety of other vegetables to create a salad. After you pour the dressing over the cooked carrots, serve them as a side dish for your favorite meal.


Instructions


1. Wash the carrots under cold, running water and scrub them with a vegetable brush.


2. Slice the carrots to your desired size.


3. Place the clean carrots into a saucepan. Fill the saucepan with enough water to cover them.








4. Bring the water to a boil. Cook the carrots until you can pierce them easily with a fork.


5. Drain the cooked carrots in a colander. Place the carrots into a large bowl.


6. Combine the white vinegar, vegetable oil, condensed tomato soup and sugar in a separate saucepan and bring the mixture to a boil.


7. Cook the marinade for one minute. Pour the dressing over the carrots. Add salt and pepper to taste.


8. Serve the carrots immediately or store them in a covered container in the refrigerator.
